Reading a Chilli by Its Heat, Colour and Skin
For importers, wholesalers and food manufacturers, a dry red chilli should be assessed against its intended use and destination specification—not colour alone. Variety, growing conditions, maturity, drying and storage can all affect the appearance and performance of a lot.
Colour and skin
Compare samples under consistent lighting. Colour can be an important buying characteristic, but it is not a complete quality grade: skin texture and shape vary by variety, and appearance alone cannot confirm freshness, heat or compliance. Agree on the target colour, size range and acceptable variation before ordering.
Variety and heat
Different Indian chilli varieties serve different needs. Byadgi is often selected for its deep colour, Kashmiri chilli for colour with milder heat, and Guntur Sannam for a hotter profile. Mundu is another regional option. These are broad buying cues, not a guarantee for every lot: confirm the exact variety and heat expectation with a representative sample and written specification.
Physical quality checks
- Pod size, length and consistency across the lot.
- Broken pods, stems, foreign matter and visible insect damage.
- Dryness and moisture against the agreed specification.
- Clean, dry packing, clear lot identification and protection during storage.
- Any off-odour, dampness or visible mould that requires the lot to be rejected or investigated.
Testing and destination requirements
Agree the required tests and acceptance limits before shipment. Depending on the destination and buyer specification, request a lot-specific certificate of analysis and any required pesticide-residue or other laboratory results. Confirm the applicable import requirements with your importer and testing partner rather than assuming one specification suits every market.
What to include in a quotation request
Share the variety, target colour and heat, grade, moisture requirement, packing, quantity, destination port and preferred Incoterm. This helps the supplier quote against the same specification and reduces avoidable differences between samples and shipment lots.
