South Indian Rice Varieties: A Practical Buyer’s Guide
South India grows some of the country's most distinctive rice: everyday table varieties like Ponni, the small aromatic Seeraga Samba, Kerala's parboiled Matta, and heritage grains such as Kavuni. For an importer, choosing between South Indian rice varieties is not a matter of picking a name.
Variety, growing region, milling, form, broken percentage, moisture and packing all decide whether a shipment suits your market.
The useful question is not which Indian rice is best. It is which specification is right for my application — and that is where a rice enquiry should start.

Ponni: the everyday grain of the delta
Ponni rice export demand splits into two products from the same grain.
Ponni Raw is milled without parboiling and keeps the softer texture South Indian households expect — steamed rice, sambar and rasam meals, curd rice.
Ponni Parboiled is soaked and heat-treated before milling. The grain hardens, resists breakage, and holds up under long holding in institutional kitchens and foodservice.
Specify which you want. They are not interchangeable, and buyers who ask simply for "Ponni" often receive the wrong one.
Seeraga Samba: the biryani grain
Seeraga Samba rice is small, short and aromatic — named for seeragam, cumin, which the raw grain resembles. It barely elongates. What it does is absorb stock and masala without collapsing, which is why the biryani traditions of Ambur, Dindigul and Vaniyambadi are built on it rather than on long-grain rice.
It is our most-requested rice line, and it occupies a premium specialty position that long-grain varieties cannot fill.
Matta and Kavuni: two Kerala and Tamil originals
Matta red rice from Palakkad is parboiled, coarse-grained and rose-brown — the everyday rice of the Kerala kitchen and a settled line in Gulf and UK diaspora retail.
Kavuni is the black heritage rice of the Tamil interior, traditionally used in festival sweets. We buy it at single-cluster scale and sell it under its own name, which is a different proposition from generic export-grade black rice. We supply both, and they suit different buyers.
Sona Masoori and IR-64: the volume lines
Sona Masoori is lightweight, low in starch and easy to digest — a versatile everyday table rice with broad consumer acceptance. It is not a South Indian crop in our own belt; we source it from the Andhra and Karnataka growing regions through vetted partner clusters, and we say so on the certificate of origin.
IR-64 parboiled rice is the institutional workhorse, supplied at 5% or 25% broken. Broken percentage is the whole conversation here: catering and processing buyers are trading appearance against yield and landed cost.
Basmati: a northern grain, honestly labelled
Basmati carries a Geographical Indication restricted to defined districts of Punjab, Haryana, Himachal Pradesh, Delhi, Uttarakhand, western Uttar Pradesh and Jammu & Kashmir. It cannot legally be called Basmati if grown elsewhere.
We supply Basmati 1121 — steam-processed, extra long grain — through vetted partners in that belt, cleaned and packed to the same written standard as everything else. If a supplier offers you Basmati grown outside the notified region, the description is wrong regardless of how the grain looks.
Raw, parboiled or steamed?
Processing changes the product more than variety does.
Raw is milled without heat treatment. Softest texture, fullest character of the variety, highest breakage. Ponni Raw, Sona Masoori, Seeraga Samba.
Parboiled means the paddy is soaked and heat-treated before milling. The grain hardens, milling recovery improves, and cooked rice stays firm under extended holding. Ponni Parboiled, IR-64, Matta.
Steamed uses controlled steam without a full soak. The grain hardens and breakage falls, but it stays white and keeps more aroma than parboiled. Basmati 1121.
Never order rice without naming the form.
What broken percentage actually means
Rice broken percentage is the proportion of broken kernels in the lot. Under 5% broken means fewer than five kernels in a hundred are broken, measured against the agreed grading method.
It affects appearance, cooking behaviour, milling recovery and price. Premium retail needs tight control because consumers expect uniform grain. A processor or institutional kitchen may accept 25% because yield and cost matter more than the look of each grain.
There is no best broken percentage. There is only the right one for your application.
How to send a rice enquiry
Do not ask us to "quote Sona Masoori." Send this instead:
- Variety: Sona Masoori
- Form: Raw
- Broken: Under 5%
- Packing: 25 kg or 50 kg
- Quantity: MT required
- Destination: Port and country
- Terms: FOB, CFR or CIF
- Also state: moisture, purity, inspection and any certification your market requires
That gives us enough to quote the correct product rather than a generic commodity price. Quotations return within one working day with a proforma invoice, and samples of up to 500 g per item are dispatched within three working days.
Every line ships against one written specification, applied consignment to consignment, with moisture controlled before packing. Testing runs through NABL-accredited laboratories, and a Certificate of Analysis can accompany each shipment — see our registrations and certificates.
Source rice from India
Two shipments of the same variety perform differently if milled, graded or handled differently. Define the specification before you compare prices.
Send your variety, form, quantity, destination and terms, and we will quote against it.
