How to Store Bulk Rice, Pulses and Spices to Prevent Pests and Moisture Loss

Proper storage helps protect bulk food ingredients from moisture, pests, odours and avoidable quality loss. Requirements vary by commodity and packaging, so follow the product specification and applicable food-safety procedures.

Keep the storage area clean and dry

Inspect the store before receiving goods. Check for roof leaks, condensation, standing water, pest activity and strong odours. Keep bags off the floor on suitable pallets or shelving and away from walls where practical, while maintaining access for inspection and cleaning.

Protect packaging

Inspect bags and seals on arrival. Damaged or wet packaging should be isolated and assessed according to the site’s food-safety procedure. Keep spice packs closed to reduce moisture uptake and aroma loss. Do not store food commodities beside chemicals or odour-producing materials.

Use stock rotation

Record receipt date, lot or batch identifier, supplier and quantity. Apply a clear stock-rotation system and use older suitable stock first, while respecting any date markings and product-specific shelf-life requirements.

Prevent and monitor pests

Keep the area clean, remove spills promptly, inspect incoming goods and maintain a documented pest-control programme. If infestation or contamination is suspected, isolate the affected lot and follow the site’s food-safety and supplier-notification process.

Store by commodity

Rice and pulses require protection from moisture and pests. Spices also need protection from moisture, light and aroma transfer. The exact temperature, humidity and storage period should follow the product specification and validated handling guidance for the commodity.

Receiving checklist

  • Check package condition and visible contamination.
  • Record lot, supplier, receipt date and quantity.
  • Store under the required conditions.
  • Keep products segregated and labelled.
  • Investigate damaged bags or quality concerns promptly.
