Urad Dal for Dosa Batter Manufacturers: How to Specify Bulk Supply

Urad dal is a critical raw material for commercial idli and dosa batter. For manufacturers, the cheapest quotation is not necessarily the best buying decision. The right specification must produce consistent soaking, grinding, fermentation and batter performance across lots.

Which urad dal is suitable for dosa batter?

Skinned white whole urad is commonly preferred for commercial fermented batter because it can provide the smoothness and viscosity needed for consistent processing. Split urad may also be suitable for some production systems, but buyers should validate the specification against their own process before changing forms.

What should a manufacturer specify?

  • Product form: skinned white whole, split or whole black
  • Purity and foreign-matter limits
  • Moisture specification
  • Grain size and uniformity
  • Colour and cleanliness
  • Pack size and food-grade liner
  • Required testing and Certificate of Analysis
  • Monthly or annual supply requirement

For larger manufacturers, supply continuity matters as much as the initial price. Agree the written specification, acceptable tolerances, packing format, delivery schedule and lot documentation before placing repeat orders.

D’Amalfi supplies whole, split and skinned white urad from India in commercial sacks and container-scale quantities. Export terms can be quoted on FOB or CIF basis depending on destination.

How much should you order?

Container-scale export requirements can be planned around approximately 25–27 MT per 20 ft FCL, subject to the final packing and loading configuration. Commercial buyers with recurring requirements should share their monthly consumption so supply can be planned rather than buying shipment by shipment.

Request a specification-based quotation

Send your required urad form, monthly quantity, packing, destination and quality specification. A specification-based quotation makes it easier to compare suppliers and avoid quality differences between lots.
